October is officially here and if it hasn’t already hit you in the face, it’s about to…PUMPKIN EVERYTHING! Whether you’re on the pumpkin spice bandwagon or not, there are a few good reasons to include these healthy pumpkin recipes in your diet…and it doesn’t just have to be limited to October 🙂
One of the things you guys have requested recently is a deeper dive into specific foods that will help with energy, weight balance, and quick, easy, nutritious meals, snacks and treats. I thought that Pumpkin was the perfect start given the obvious craze for it that the fall brings. But pumpkin is so much more than just a fall trend, with tons of nutrition benefits as well, you might want to consider it as a year round ingredient!
Packed with Vitamin A with 1 serving of pumpkin covering your daily Vitamin A requirements, count it in for healthy hair, skin and immune system.
Not surprising with it’s bright orange hue, pumpkin is also a good source of anti-oxidant Vitamin C. Count it as another defense to cold and flu season, plus, Vitamin C helps our bodies absorb plant sources of iron!
Pumpkin (and it’s seeds) are also a great source of fiber! Pack it into your smoothies, stir fries, or pastas or sprinkle those toasted seeds onto salads or into trail mixed for an extra boost of iron.
