I’m back! And I’ve missed you guys! So this week I’m sharing a three in one recipe with my Chia Pudding 3 Ways! I’m just starting to settle back into real life after two and a half weeks in Portugal. It was such an amazing trip. I’ve got some of the highlights over on Insta if you’re interested in taking a gander. Just be prepared to work up an appetite. Haha. So much good food!
There’s nothing that makes me appreciate life and seems to get me in touch with my truest self than traveling. There’s just something about seeing life through the eyes of a different culture and discovering so much new – new food, new sights, new traditions – that seems to ignite creativity and gratitude, and ground me all at the same time. This was also an extra special trip as we planned it to be over Theo’s due date so that we could celebrate him the best way we know how! There were definitely some emotional moments, but it really did feel like a celebration. And I am so grateful that I had Meik by my side for both the ups and the downs along the way.
I have definitely been a bit jet lagged this week. It seems to be hitting me harder as the years go by. I can’t believe I will be 33 in just a couple of weeks! I know this may not sound old to some of you, but this one kind of took me by surprise when I realized what number it was this year! Haha.
To help ease the vacation blues I’m trying to be extra organized. I was doing so much recipe testing before we left that luckily I had a couple of dinners stashed in the freezer, and just to make sure I can soak up every minute of sleep, I have been on the pre-prepped chia pudding train this week.
I was testing these out before I left so I’ve included a few different flavors for you guys. This week I’m going with the Golden Milk version for that extra kick of spice and antioxidants. I’ve been playing around with the toppings a bit but seem to keep coming back to coconut and papaya. SO good!!
The old adage that breakfast is the most important meal of the day has stuck around for a reason. Although I’d argue that all meals are equally important- after all, eating regularly throughout the day is what regulates your appetite, cravings, and energy – the way you start your day really sets the tone for what’s to come. I don’t know about you guys but the way I start my day can truly make all the difference in having a smooth and positive day or a down right chaotic day where I feel like I’m just scrambling to catch up all day long!
A lot of my clients come to me not being “breakfast people”. I get it! I loooove my sleep too. And if you’ve gotten used to not eating in the mornings, it can be a little bit of a shock for the digestive systems. But this breakfast has both bases covered! I’ve got you 🙂

Chia seeds are gentle on your digestion and also help to keep things moving along smoothly. And I am packing these little jars with tons of Level Ground Trading goodies for maximum flavor, minimum effort.
You might remember my obsession for their dried pineapple and mango. Simple and delicious. Just how I like it. With a single food ingredient list – organic fruit – that’s it, you don’t need to worry about that taste being too good to be true. No sugar sprinkled this or preservative that. They just came out with a dried dragon fruit and dried banana so I have been working with them on some new recipes to highlight just how delicious their products are! Notes Before You Dive In:
- If you’re not a fan of the texture of the seeds whole, try blending the puddings for a creamier consistency
- I used the Silk Regular Coconut Milk (not the unsweetened stuff) to give a little bit of sweetness but you could replace for unsweetened if preferred.
- Even though there’s a bit of sugar from the coconut milk, they’re not very sweet. Add a touch of honey or maple syrup to taste if you’d like!
- For some extra protein, top with 2-3 Tbsp nuts or seeds like walnuts, hemp hearts, pumpkin seeds or slivered almonds
Banana Cream Pie Chia Pudding
- Total Time: 1 hour 10 minutes
- Yield: 2 1x

Like dessert for breakfast. Chia Pudding is a great prep ahead breakfast for busy mornings. I hope you enjoy this Banana Cream Pie Version!
Ingredients
- 1 cup coconut milk or vanilla almond milk (regular, not unsweetened)
- 1 banana
- ¼ cup chia
- Optional – sweeten with maple syrup to taste
- 2 tbsp Level Ground Trading cacao nibs
- ¼ cup Level Ground Trading dried bananas
- 2 tbsp shredded coconut (I used sweetened, can use unsweetened if preferred!)
Instructions
- Add milk, banana and chia into a blender and blend until smooth. Divide between 2 small jars or containers.
- Place in the fridge to set for at least 1 hour or overnight.
- Top with cacao, dried bananas and coconut and enjoy immediately or throughout the week!
Notes
- If you don’t have or want to use a blender – In a small bowl, mash banana with the back or a fork until a thick paste is formed. Add the milk and chia seeds and stir to combine well. Divide into containers and add toppings.

Golden Milk Chia Pudding
- Total Time: 1 hour 10 minutes

Ingredients
- 1 cup coconut milk or vanilla almond milk (regular, not unsweetened)
- ¼ cup chia
- 1 tsp Level Ground Trading turmeric
- ¼ tsp Level Ground Trading ground ginger
- ⅛ tsp Level Ground Trading black pepper
- Optional toppings: ¼ avocado each for a more savoury option, ½ cup diced fresh papaya or 2 Tbsp Level Ground Trading Dried Mango
Instructions
- Add milk, chia, turmeric, ginger, and pepper to a small bowl or jar and whisk with a fork or shake to combine all ingredients well.
- Alternatively blend all ingredients until smooth.
- Divide between 2 small jars or containers. Place in the fridge to set for at least 1 hour or overnight.
- Top with desired toppings and enjoy immediately or throughout the week!

Red Dragon Chia Pudding

Ingredients
- 1 cup coconut milk or vanilla almond milk (regular, not unsweetened)
- ¼ cup chia
- 1 small cooked beet, skin removed
- 2 tbsp Level Ground Trading dried dragon fruit and/or dried pineapple
Instructions
- Add milk, chia and beet to a blender and blend on high until beet has completely blended in.
- Divide between 2 small jars or containers. Place in the fridge to set for at least 1 our or overnight.
- Top with dried dragon fruit and/or pineapple.
- Prep Time: 10 minutes
- Cook Time: 1 hour (in fridge to set)
