Easy Copycat Starbucks Bacon & Gruyere Egg Bites

I’ve got you with these copycat Starbucks egg bites that come together in under 30 minutes for a fraction of the cost of your favorite coffee shop version. Protein-packed from the eggs and cottage cheese, these easy-to-meal-prep, insanely delicious egg bites will change your life!

I’ve always loved the convenience of grabbing Starbucks egg bites, but swinging by a coffee shop isn’t always in the cards (or easy on the wallet). We’ve been making our own egg bites at home for awhile now (you’ve gotta try these spinach and sundried tomato egg bites too!) and after recently having this bacon and gruyere flavor on a road trip pitstop, I knew I had to replicate this flavor bomb or a combo. They are just as delicious as the coffee shop version, rich with nutrition, and so easy to meal prep for a busy week ahead.
All you need is 6 simple ingredients to create a breakfast that is protein-packed (we’ve got eggs, bacon and cottage cheese contributing an extra 25 grams of protein per cup) and so delish and satisfying as a snack or brekky alike.
You can also add these to the list of prep ahead options (like my delicious turkey sausage breakfast sandwiches and my high protein egg bake) to save you time in the morning.
As a dietitian and busy mom of two I know both how important breakfast is, and how hard it can be to squeeze in. So having something prepped and ready to go is key! What I know for sure is that when I start my morning with something balanced with protein, healthy fats, and fiber (my go-to PFF combo!), I have way more energy, less of those out of control cravings, and I don’t crash mid-day when I need my energy most. Pair these with some avocado toast or a quick grab and go blender muffin and you’ve got yourself a winning combo!

A couple notes about the ingredients:
Cottage Cheese makes the egg bites lighter an fluffier while adding an extra boost of protein (25 grams per cup!)
Cornstarch: After multiple rounds of testing I discovered that cornstarch is the magic ingredient to achieving that same velvety texture you get from the Starbucks egg bites, without needing a sous vide machine (the method they use). Cornstarch helps bind all of the ingredients together so their light and fluffy and not rubbery or watery.

How to Make These Egg Bites
Making these egg bites is incredibly simple. Here’s how I do it:

Preheat the oven to 350°F and line a muffin tin with parchment paper baking cups or spray well with cooking spray.
Roughly chop the bacon and sautee over medium heat until crispy

Blend eggs and cottage cheese in a blender until smooth, about 30 seconds. Alternatively you can use an immersion blender.

Evenly divide ¾ cup of shredded cheese, all of the bacon and the spinach among the muffin cups.

Fill each muffin cup ⅔ full with the egg mixture and gently stir to combine ingredients. Sprinkle the remaining cheese over the tops and bake for 25-30 minutes until set. Let them rest for 5-10 minutes before removing from the tin.
What Ingredients Can You Prep Ahead?
Over the years, I’ve become obsessed with figuring out how I can maximize time efficiency in the kitchen. One of the easiest ways you can do that is to prep a few core ingredients on a Sunday and use them throughout your week.
Here are some ingredients you can prep ahead of time:
Chop and cook the bacon for easy assembly. You could even cook extra while you’re at it to throw into salads or bowls throughout the week.
Shred the cheese using a food processor or cheese grater and store in the fridge in an airtight container.

How to Elevate These Egg Bites
Want to take these egg bites to the next level? Here are some of my favorite ways to elevate them:
Add More Veggies: Sautéed mushrooms, or roasted red peppers work well in these.
Spice it Up: Add chili flakes, smoked paprika, or a dash of hot sauce for a kick.
Try Different Proteins: Swap bacon for diced ham, smoked salmon, or even turkey sausage.Experiment with Cheese: Instead of gruyere, try feta, goat cheese, or pepper jack for different flavors.

Ingredients
- 8 eggs
- 1 cup (250 mL) cottage cheese
- 1 Tbsp corn starch
- 1 cup (250 mL) shredded gruyere or aged cheddar
- 5 slices cooked bacon, chopped
- 1 cup spinach, roughly chopped
- Salt and pepper, to taste
Instructions
- Preheat the oven to 350°F and line a muffin tin with parchment paper baking cups or spray well with cooking spray and set aside.
- Heat a splash of oil in a large frying pan over medium heat. Add the bacon to the pan in a single layer, separating the pieces if they are clumped together. Cook until crispy, about 3-4 minutes. Remove the bacon from the pan and place on a plate with paper towel to absorb the extra oil.
- To a blender, add the eggs, cottage cheese, and cornstarch and blend until smooth. Alternatively you can use an immersion blender.
- Evenly divide ¾ cup of shredded cheese and all of the bacon and the spinach among the muffin cups. Fill each muffin cup ⅔ full with the egg mixture and gently stir to combine ingredients. Sprinkle the remaining cheese over the tops and bake for 25-30 minutes until set.
- Remove from the oven and let them sit for 5 to 10 minutes before removing from the muffin tin. Serve immediately or store in an airtight container in the fridge to enjoy later.
Notes
*Update and note about the cornstarch: I realized that when I first published the post I forgot to list the cornstarch as an ingredients! In my opinion the cornstarch make all the difference to achieve that soft, yet firm, velvety texture. Of course if you’ve made them before without and enjoy that way feel free to skip it but I highly recommend trying it out!
Prep ahead: The bacon can be cooked ahead of time and stored in the fridge or freezer. The cheese can be shredded ahead of time.
Storage: Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 1 month

Hi Lindsay. I just made this recipe and I loved it!! Will definitely make again. They are SO flavorful! I used aged cheddar cheese and I will make them again and try the Gruyere. I did notice that they stuck in the muffin pan quite a lot, and I used a good bit of cooking spray. I’m going to try the parchment paper baking cups next time. I found the egg mixture made more than 12 muffin cups full, which is great because we devoured them all in one sitting! Thanks again for another great recipe!
