Crispy Roasted Sweet Potatoes

Description

These perfectly roasted honey sweet potatoes are tender on the inside and crispy on the outside. Caramelized from the balsamic honey glaze and served on a bed of creamy garlicky yogurt goodness, these sweet potatoes take only 10 minutes of prep and pair with almost any recipe.


Ingredients

Scale
  • 2 medium sweet potatoes, cubed
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 1 Tbsp avocado oil
  • 2 Tbsp fresh thyme removed from stem + more to garnish
  • ¼ tsp salt, adding more to taste as desired

SAUCE

  • 1½ cups 2-5% plain Greek yogurt
  • 1 small clove garlic, minced

 


Instructions

  1. Preheat the oven to 425 F and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, toss the yams, balsamic, honey, oil, salt & 2 tablespoons of thyme. Bake for 40-50 minutes, until golden on the outside.
  3. Meanwhile, blend the yogurt and garlic in a high-speed blender or small food processor.
  4. To serve, spread the yogurt aioli on the bottom of your serving dish, top with warm roasted yams. Finish with a light drizzle of honey and a few sprigs of thyme and enjoy!
