Description
These perfectly roasted honey sweet potatoes are tender on the inside and crispy on the outside. Caramelized from the balsamic honey glaze and served on a bed of creamy garlicky yogurt goodness, these sweet potatoes take only 10 minutes of prep and pair with almost any recipe.
Ingredients

- 2 medium sweet potatoes, cubed
- 1 Tbsp balsamic vinegar
- 2 Tbsp honey
- 1 Tbsp avocado oil
- 2 Tbsp fresh thyme removed from stem + more to garnish
- ¼ tsp salt, adding more to taste as desired
SAUCE
- 1½ cups 2-5% plain Greek yogurt
- 1 small clove garlic, minced
Instructions
- Preheat the oven to 425 F and line a baking sheet with parchment paper.
- In a medium mixing bowl, toss the yams, balsamic, honey, oil, salt & 2 tablespoons of thyme. Bake for 40-50 minutes, until golden on the outside.
- Meanwhile, blend the yogurt and garlic in a high-speed blender or small food processor.
- To serve, spread the yogurt aioli on the bottom of your serving dish, top with warm roasted yams. Finish with a light drizzle of honey and a few sprigs of thyme and enjoy!
