One of the best things about this recipe is its versatility. I usually use whatever bread we have on hand, like whole grain or sprouted bread, but if I wanna level things up a bit for a nice brunch, I love using brioche or French bread for a lighter, fluffier texture. For my day to day, the dietitian in me loves a whole or sprouted grain bread for a little boost of fiber and B vitamins, but not every meal has to be about nutrition first! If you’re craving a soft, fluffy white bread for this baked French toast, please, enjoy it without guilt!

I love to top it with my Whipped Greek Yogurt and fresh berries which also just happen to make it a balanced meal 😉

What You’ll Need for this Recipe

Bread: Use whatever you have on hand! Whole grain bread adds fiber, while brioche or French bread create a lighter, fluffier texture.

Eggs: What gives french toast its signature texture while adding a boost of protein!

Milk of Choice: Again here I just use whatever I have on hand, usually 2% milk. Plant based milks will work well too (a vanilla flavored one would be delish!)

Cinnamon: I love the warming spice notes cinnamon adds! You could also add nutmeg if you’ve got it on hand.

Vanilla Extract: A little goes a long ways and adds a bit of a natural sweetness to the overall flavor.

Maple Syrup: I tested it with and without and found adding just a dash gives the perfect touch of sweetness to the toast! If you won’t be topping your toast with maple syrup, you may want to add a bit more.

Optional Toppings: Whipped Greek yogurt, fresh berries, maple syrup, or even a sprinkle of powdered sugar.

Why Use a Sheet Pan for French Toast?

Using a sheet pan for French toast is a game-changer! It allows you to cook all the slices at once, saving time and effort compared to stovetop cooking. It’s perfect for entertaining, you can prepare everything ahead of time and enjoy breakfast with your guests instead of standing over the stove. The easy cleanup is just the icing on the cake!

What Type of Bread Works Best?

One of the great things about this recipe is that it works with almost any bread. I often reach for whole grain or sprouted bread for weekday breakfasts, knowing the added fiber will keep me full and energized a bit longer into the morning. For a weekend brunch or having company, brioche or French bread is my go-to for a lighter, fluffier texture! You can use whatever you have on hand, just make sure it’s sturdy enough to hold up to the egg mixture.

Nutrition Benefits (Nutrition by Addition)

Let’s take a look at how this baked French toast adds both flavor and nourishment to your morning.

Eggs are a great source of protein, plus micronutrients Vitamin D and Choline. Whole grain bread, if you choose it, adds fiber for more stable blood sugars and it supports digestion. But remember, it’s not always about nutrition being front and center—sometimes it’s just about enjoying a meal that brings you joy.

Recipe, Kitchen, & Time Saving Hacks

Double the Recipe: This is perfect for meal prep or feeding a larger crowd. Bake two trays at once! This French toast also freezes well! Just pop them in a sealable container or reusable freezer bag, with parchment paper separating the layers, then pop in the toaster when ready to eat!

Use Pre-Sliced Bread: Saves prep time and ensures even slices for consistent cooking.

Quick Cleanup: Line your sheet pan with parchment paper for easy cleanup!

Instructions

  1. Preheat the oven to 375ºF.
