Description

These 5-ingredient no bake pecan pie energy balls come together in 15 minutes and are naturally sweetened with dates and packed with fiber, protein and nourishing plant-based fats. Prep ahead & freezer-friendly! 


Ingredients

Scale
  • 1 + 1/2 cup pecans
  • 1 cup softe pitted dates
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Pinch of salt

Instructions

  1. Add 1 cup pecans, dates, cinnamon, vanilla and salt to a food processor and blend into a paste, stopping throughout to scrape down the sides as needed.
  2. Once a smooth paste has formed, use a tablespoon to scoop out the mixture and roll it in your hands to form evenly sized balls.
  3. Crush the remaining 1/3 cup pecans and place them on a plate. Roll the balls into the crushed pecans to cover all sides. 
  4. Enjoy immediately or store in an airtight container in the fridge up to 1 week, or the freezer up to 3 months.

Notes

Dates: If your dates aren’t soft, soak them in boiling water ahead of time for ~15 minutes, or until they soften. Drain the water before adding them to the food processor.

Pecan Swaps: cashews or walnutes

Spices: in addition to cinnamon, nutmeg and/or ginger could also work!

Fridge Storage: Store in an airtight container in the fridge up to 1 week.

Freezer Storage: Store in an airtight container in the freezer up to 3 months.
