It’s high in protein, with nourishing fats from the avocado and brie, plus a boost of fiber from baby spinach and tomatoes, making it a nourishing option for lunch or dinner.

As a dietitian, one of the things I’m always telling clients is not to skip lunch! Eating regularly throughout the day is so important for blood sugar balance, energy, and preventing that hanger irritability. haha I love how versatile and meal prep-friendly this wrap is, so you’ve got not more excuses to skip lunch, k?

Most of the year I’m making this with deli-sliced turkey, but it’s also delicious with leftovers from a turkey dinner! And if turkey isn’t your thing, you can easily swap it for chicken (my thinly sliced chicken breasts are perfect in here! Don’t be afraid to customize it with what you have on hand, this wrap is all about simple ingredients coming together in a way that feels good and tastes even better!

What You’ll Need for this Recipe

Tortilla: A soft tortilla wraps everything up neatly, making this a perfect grab-and-go meal. Opt for whole grain tortillas if you want to add a bit of fiber!

Pesto: Adds a savory, herby flavor that compliments the turkey and brie so well. Pesto is also rich in nourishing fats from olive oil and nuts.If you’re not a big pesto fan just skip it altogether or swap it for something like cranberry sauce, hummus or an olive tapenade!

Baby Spinach: Brings a pop of color, a crisp texture, and a boost of vitamins like A and K, as well as iron.

Tomato: I added these in at the last minute and I’m so glad I did! They add the perfect juiciness and moisture, plus a dose of antioxidants including lycopene. I like using firmer varieties like roma or beefsteak as they’ll hold up a bit better in this wrap.

Brie Cheese: I absolutely love brie cheese and it is the perfect compliment to the flavors in this wrap. It’s rich and creamy texture can’t be beat in my opinion, but any cheese will work in here!

Avocado: Brings creaminess and healthy fats that keep you satisfied, plus a boost of antioxidant vitamin E.

Sliced Turkey: A great source of protein, turkey makes this wrap both filling and nourishing. Leftover turkey or deli slices work equally well.

Salt and Pepper: Optional, but I find they add the perfect touch of flavor.

How to Make this Turkey Wrap

Lay the tortilla flat on a clean surface and spread pesto down the center.

Top with baby spinach, tomato slices, brie cheese, avocado, and sliced turkey.

Fold in the short ends of the tortilla, then fold the long end over the filling and roll it up tightly like a burrito.

Enjoy as is or slice in half for an easy-to-eat wrap!

Swaps and Variations

Pesto vs. Cranberry Sauce: For a holiday-inspired wrap, swap the pesto for cranberry sauce. If you go this route, you may want to leave out the tomato or avocado but I don’t mind keeping them in!

Protein Swaps: Deli turkey or leftover turkey are both great options, but you can also switch things up with thinly sliced chicken breasts. For a plant-based twist, try adding smoked tofu or tempeh!

Ingredients

  • 1 medium tortilla
  • 1 tablespoon pesto
  • ½ cup baby spinach
  • Tomato, sliced (I like roma or beefsteak)
  • 50 grams brie cheese, sliced
  • avocado, sliced
  • 100 grams sliced turkey (or ½ cup leftover sliced or cubed turkey)
  • Salt and pepper, to taste


Instructions

  1. Lay the tortilla flat on a clean surface. Spread pesto in a strip down the middle.
  2. Top with spinach, tomato slices, brie cheese, avocado, and turkey.
  3. Fold in the short ends of the tortilla, then fold the long end over the filling and roll it up tightly like a burrito.
  4. Serve as is or slice in half. Enjoy!

Notes

  • For a holiday twist, swap the pesto for cranberry sauce and skip the tomato or avocado if desired.
