With just 10 minutes of prep, and a few simple ingredients like chewy medjool dates, creamy peanut butter, crunchy peanuts, and rich dark chocolate, this little no-bake delight brings all the nostalgic candy bar vibes with a nourishing twist.

As a dietitian and mom of two snack obsessed kids (who are we kidding, they come by it honestly. haha) I’m always looking for delish and nourishing snack recipes that are not only quick and easy, but actually provide that staying power between meals (without the energy crash).
Cue my PFF combo of protein, fat and fiber. This power combo helps to boost energy levels throughout the day, support balanced blood sugars, and stop you from feeling so out of control around food by the time dinner rolls around. Let me tell you, this recipe delivers! Plus, it’s no-bake and takes just 10 minutes to prep before setting in the freezer. Yes, please!
This quick and easy date bark is basically everything you love about a Snickers – sweet, salty, crunchy, chocolatey—all made with simple ingredients that pack in fiber, nourishing fats, and plant-based protein. That dreamy caramel-nougat flavor? It comes from medjool dates. The peanut crunch and creamy center? All thanks to natural peanut butter and roasted peanuts. And the dark chocolate topping? Just the thing to pull it all together (with a little antioxidant boost, too).
Now I’m not saying this needs to replace a good ol’ Snickers, those will always be my first pick out of the Halloween stash—but remember intuitive eating is all about ditching the rules, it doesn’t have to be either/or!
This has become one of those recipes I keep on regular rotation in my freezer stash. Whether you’re running between meetings, chasing toddlers, or just want a little something sweet in the afternoon, these bark-style bars are here for you. A few notes about the ingredients
The full ingredients are listed below, but these deserve an honorable mention.
Medjool dates work best for this recipe. They are bigger, with a soft and chewy texture that makes the perfect biteable base that won’t break your teeth.
Natural peanut butter: I love how drippy and pourable natural peanut butter is. It’s so much easier to spread for even distribution and, along with the roasted peanuts, provides a nice boost of protein and nourishing fats to this bark, both known to help balance blood sugars, and help keep you full longer!
Side note – do not skimp on the pb! I originally tested with just ⅓ cup pb and ¼ cup of peanuts and there just wasn’t enough. I found that ½ cup of each was the perfect ratio so the dates don’t overpower the other flavors.
Chia seeds (optional but highly recommend!): OK, I know they might seem like a curveball, and yes, I know there aren’t chia seeds in a snickers bar. But trust me, they’re here for a reason. Chia seeds bring in a boost of blood sugar balancing fiber, some plant-based omega-3s, and honestly, I just loved the extra crunch they add!

Make sure to remove the pit from the dates, then continue to peel them open so you can lay them flat.

I laid them open side down so I wouldn’t be dealing with the sticky side up when trying to roll them out and flatten them. Don’t worry if it’s perfectly rectangular, the share really doesn’t matter as you’ll be cutting or breaking it up anyway.

Now for the fun part, spread the peanut butter and sprinkle with your chopped peanuts. The chia seeds are optional so if you don’t’ have them, no worries.

Melt the chocolate until silky smooth and pourable.

Pour the chocolate over the top of the bark and spread with a spatula or knife to coat the top evenly. Don’t worry if you dislodge some of the peanuts, it’ll all taste the same in the end! Sprinkle with flaky sea salt if desired.

Pop it in the freezer for about 10 minutes, or until the chocolate is set. If you want to break it into chunks with your hands you’ll need to leave it in a littler longer.
Success Tip: If your dates are a little old and not super soft, pop them in the microwave for 10 seconds to make them more pliable.

Ingredients
- 24 Medjool dates, pitted
- ½ cup natural (drippy) peanut butter
- ½ cup salted roasted peanuts, roughly chopped
- 1 ½ tablespoons chia seeds
- ¾ cup dark chocolate chips
- 2 teaspoon coconut oil
- Flaky salt
Instructions
- Line a baking sheet with parchment paper. Open the pitted dates and lay them flat onto the prepared baking sheet until they form a rectangle, they don’t need to be completely touching. Press down firmly with your hands or the bottom of a cup to flatten them out.
- Pour the peanut butter onto the dates and spread evenly across the top. Sprinkle with the peanuts and chia seeds.
- In a microwave safe dish, add the chocolate chips and coconut oil. Melt on high for 30 seconds, stir and continue to melt in 20 second increments until completely melted. Pour the chocolate over the peanuts and spread it evenly, ensuring everything is covered.
- Place in the freezer to set for about 10 minutes, or until chocolate has hardened. Remove from the freezer and sprinkle with flaky sea salt if desired (highly recommend). Cut into pieces and enjoy!
Notes
Setting time: after 10 minutes it should be firm enough to cut into with a knife but the chocolate will be too soft to break with your hands. If you prefer the more “bark-like” pieces, leave it in the freezer another 20-30 minutes until you can break it up easily with your hands.
Storage: Store in the fridge for up to 1 week or in the freezer for up to 3 months. If storing in the freezer, thaw at room temperature for 10-15 minutes to soften a bit before eating.
How many pieces: Sometimes when I make this I break it into larger chunks but have found over time that I love having the smaller pieces handy (about 30). It’s quite satisfying so sometimes I just want a small piece with something else and other times I may choose to have a few. The smaller pieces give you more options here!
