Ingredients

⅓ cup quick oats

⅔ cup vegetable stock, chicken stock or water

½ tsp ground turmeric

Pinch of coarse salt and a generous sprinkle of freshly-cracked black pepper

1 medium apple, cut into bite sized chunks

1 oz (28g) sharp white cheddar, grated
Instructions

In a small saucepan, combine the oats, vegetable stock or water, turmeric, and black pepper and bring to a boil over medium high heat. Reduce to a simmer and cook for 5 minutes, stirring frequently to prevent sticking to the pan.

Once the oats have thickened and most of the liquid has evaporated, remove from heat and dish into a bowl.

Top with the apple chunks, cheese, and more salt and pepper to taste. Enjoy!
