If you’re looking for an easier than easy breakfast option to have in your back pocket, this strawberry yogurt parfait is it. As a dietitian, Greek yogurt is one of my top kitchen staples. It’s an instant protein add-in (no protein powder required), it provides a boost of bone health supporting calcium, gut-nourishing probiotics, and it’s so dang versatile (I also love adding it to this creamy strawberry banana smoothie bowl and my strawberries and cream overnight oats). So if I’m gonna make a yogurt parfait, it’s getting the Greek yogurt glow up.

For this recipe I used 5% Greek yogurt. Despite the 90’s fear of fat, I’m here to tell you not to shy away from it! Fat is a satiety factor, meaning it not only helps you feel more full, but more satisfied after eating. It also helps keep blood sugars stable for longer lasting energy and less risk of a hangry outburst at 9am. Plus, flavorwise, that bit of extra fat also makes these berry parfaits more creamy, and less tart and tangy for a super smooth, almost whipped cream-like consistency. Just trust me on this one!

A few ingredient highlights that make this parfait the best

Use Frozen Strawberries! As they thaw, they create a nice juicy syrup, plus they’re softer and easier to mash up into the cheater “chia jam” made here. I also love that they make this recipe ready to whip up year round for a dose of immune supporting Vitamin C any time we need it! 

Don’t Skip the Chia Seeds: They’re key to turning the strawberries into a crave-worthy jam-like texture. They also add an extra 2.5 grams of filling fiber to each parfait, not to mention the anti-inflammatory omega-3s!

Bran Buds (optional): I love adding bran buds for a major fiber boost (7 grams for just ¼ cup!).
They make these parfaits even more filling while supporting gut-health too! I stir them right into the granola to get the best of both worlds!

Toss your strawberries, honey and chia seeds into a microwave-safe bowl.

Heat them in 30-second increments until they’re nice and soft, then mash them up with a fork until you’ve got a chunky paste. Let the mix sit while you prep the rest. The chia will do its thing and thicken it up into a quick “jam.”

Description

This 5-minute Greek yogurt and fruit parfait is the perfect protein-rich breakfast for busy mornings (around 35 grams protein per serving). It’s so easy to make with just a few simple ingredients including fiber-rich strawberries and chia seeds, layered with creamy yogurt and topped with crunchy granola. It’s filling, satisfying and worth waking up for.


Ingredients

Scale
  • 2 cups plain Greek yogurt (I used 5 %) 
  • 2 cups frozen sliced strawberries
  • 1 ½ tbsp honey
  • 1 Tbsp chia seeds
  • ½ cup Granola (store bought or homemade
  • Optional: ¼ cup bran buds (mix in with granola)
  • Fresh mint


Instructions

  1. Add strawberries, chia seeds and honey to a microwaveable bowl and microwave in 30 second increments until thawed. Mash with the back of a fork until a chunky paste is formed. 
  2. Divide half of the yogurt between two jars or bowls, followed by ¾ of the strawberry mixture, then the remaining yogurt. Top with the leftover strawberry mixture, and finish with granola (mixing in the bran buds if using). Top with fresh mint.

Notes

Meal Prep: I like to double this recipe and store in sealable jars or glass containers for an easy grab-and-go breakfast or snack! If using jars, I love these rust-proof lids!
