Description
This 5-minute Greek yogurt and fruit parfait is the perfect protein-rich breakfast for busy mornings (around 35 grams protein per serving). It’s so easy to make with just a few simple ingredients including fiber-rich strawberries and chia seeds, layered with creamy yogurt and topped with crunchy granola. It’s filling, satisfying and worth waking up for.
Ingredients
Scale
- 2 cups plain Greek yogurt (I used 5 %)
- 2 cups frozen sliced strawberries
- 1 ½ tbsp honey
- 1 Tbsp chia seeds
- ½ cup Granola (store bought or homemade)
- Optional: ¼ cup bran buds (mix in with granola)
- Fresh mint
Instructions
- Add strawberries, chia seeds and honey to a microwaveable bowl and microwave in 30 second increments until thawed. Mash with the back of a fork until a chunky paste is formed.
- Divide half of the yogurt between two jars or bowls, followed by ¾ of the strawberry mixture, then the remaining yogurt. Top with the leftover strawberry mixture, and finish with granola (mixing in the bran buds if using). Top with fresh mint.
Notes
Meal Prep: I like to double this recipe and store in sealable jars or glass containers for an easy grab-and-go breakfast or snack! If using jars, I love these rust-proof lids!
