This cottage cheese toast recipe is a perfect combination of creamy and crunchy with a hint of spice that you can whip up in 5 minutes or less. Not only is it a quick and easy breakfast or even snack, but it’s also loaded with protein, nourishing fats, and a variety of essential nutrients.
- 1 slice toast (I like rustic sourdough)
- 1 tomato, sliced (I like heirloom tomatoes if available/in season)
- ½ cup cottage cheese
- Chili crisp oil
- Drizzle of honey (optional)
- Salt and pepper
Toast your favorite bread in the toaster oven or oven.
Spread the toast with cottage cheese and drizzle with chili crisp oil. Top with sliced avocado followed by the tomato slices. Season with salt and pepper and a sprinkle of chili flakes, if desired. Enjoy!
I recommend using heirloom tomatoes if they’re in season. You can also use vine tomatoes, cherry or strawberry tomatoes or roma tomatoes.
