Juicy Maple Soy Glazed Chicken Burger

Description

This juicy barbecued chicken burger is made with simple and flavor-packed maple-soy marinated chicken breast and takes just15 minutes to cook on the grill! Topped with citrus slaw and grilled pineapple it is the most satisfying balanced meal!


Ingredients

Scale
  • 4 large chicken breasts
  • 8 Pineapple Rings
  • 1 cup spinach
  • 4 burger buns

Marinade

  • 1/4 cup soy sauce
  • 1/4 cup maple syrup
  • 1 Tbsp avocado oil or other high heat cooking oil
  • 2 cloves garlic, minced
  • Salt & pepper to taste

Slaw

  • 2 cups slaw mix
  • Juice of 2 limes
  • 1 ½ Tbsp olive oil
  • Pinch of salt


Instructions

  1. To a large bowl, add soy sauce, maple syrup, oil, garlic, salt and pepper. Whisk to combine. Add chicken and marinate for a minimum of 30 minutes or overnight.
  2. Heat barbecue on high, then turn down to medium-high heat (about 400F). 
  3. Place chicken on the grill, thick side down and cook 6-8 minutes. Flip and cook another 6-8 minutes on the other side until juices run clear when pierced with a fork or knife. Remove chicken from the grill and let it rest, about 5 minutes.
  4. While the chicken cooks, add the slaw mix, lime juice, olive oil and salt to a medium bowl. Mix to combine and set aside.
  5. Once the chicken is removed from the grill, add the pineapple and cook 2-3 minutes per side until nicely charred but still somewhat firm. Lightly toast buns on the grill.
  6. To assemble the burgers, spread both sides with mayo or butter then layer with spinach, slaw, chicken, pineapple rings, and any other desired toppings.  Enjoy!

Notes

If you don’t eat chicken, this can also be made with salmon or a tempeh burger!
