These delicious Coconut Margarita Popsicles are a guaranteed crowd pleaser! This adult version (yes, dietitians like to have fun too!) can be whipped up in less than 5 minutes and ready to enjoy after a night in the freezer.

Before we jump into the recipe, I know that there can be feelings of guilt after eating a treat or enjoying a cocktail with friends. 

In this complicated and sometimes overly obsessive health world, it can be easy to forget that having a treat is ok. As a Registered Dietitian, I believe that balance is a good thing! Now I’m not saying everyone should drink for good health, but if you do enjoy that glass of wine or a nice fresh margarita ice pop, go on and enjoy it!

If you don’t drink alcohol or want a kid-friendly option, you can simply eliminate the triple sec and tequila for an equally delicious treat or try these coconut coffee popsicles or lemon cheesecake popsicles!

How to Make Frozen Margarita Popsicles

These boozy popsicles took a little trial and error to get right but, after a few iterations, I found the perfect combo of ingredients to make this delicious treat!

To make Frozen Margarita Popsicles, whisk together the warm water and honey in a medium bowl until the honey is dissolved. Add in all the other ingredients and stir to combine everything. Make sure everything is stirred thoroughly so you have consistency throughout the boozy ice pop. (Note: Make sure to use regular coconut milk vs low fat coconut milk, low fat has more water content and will cause your popsicles to separate)

Pour into your popsicle mold or reusable ice pop bags and freeze overnight.

One of the challenges in making boozy tequila popsicles (or any frozen alcohol alternative), is that the ingredients can separate and alcohol will take longer to freeze. In this recipe, I found that using soda water and premixing the honey created an even distribution throughout the popsicle.

If you’re adding other fruits or berries, you can stir the popsicles one hour after being in the freezer and then add the popsicle sticks. This ensures they don’t sink to the bottom of the mold.

Coconut Tequila Popsicle Substitutions

Non-Alcoholic Substitutions: You can either eliminate the triple sec and tequila completely. You can also add a fruit puree or Greek yogurt to make a creamier popsicle.

Vegan Substitutions: If you’re looking for a vegan option, you can replace the honey with sugar or maple syrup. Make sure to premix whatever sugar replacement you use with warm water before adding the other ingredients.  

Other Cocktail Popsicle Varieties

You can use this recipe as a template to recreate your favorite margarita popsicle! It might take a little experimenting to get the desired consistency but it’s always fun creating something new. Below are a few suggestions to try!

Strawberry Coconut Mojito: Blend strawberries and mint to create a puree or add a strawberry puree and mint extract to the popsicle mix. Substitute the tequila and triple sec for white rum.

Raspberry Coconut Daiquiri: Add a raspberry puree (or add full raspberries) into the popsicle mix. Substitute the tequila and triple sec for white rum. 

Coconut Lime Vodka Soda: Squeeze a fresh lime into the popsicle mix. Substitute the tequila and triple sec for vodka. You can even add fresh round lime slices (I recommend using these molds) for a fun looking treat!

Refreshing Coconut Margarita Popsicles

Description

These boozy margarita ice pops are the ultimate icy cold treat on a hot day! Made with 1800 Coconut Tequila, triple sec, and coconut milk, they are super easy to prepare and so refreshing.


Ingredients

Scale
  • 4 tbsp honey
  • 4 tbsp warm water
  • 4 oz coconut tequila ( I used 1800 Coconut Tequila)
  • 2 oz. Triple Sec
  • 250 ml (1 cup) canned coconut milk (regular, not light.)
  • 250 ml (1 cup) soda water
  • Optional: 1/4 cup Greek yogurt (for a creamier texture)

Instructions

  1. Add your honey and warm water to the bottom of a medium bowl and whisk with a fork or whisk to make a honey water. This will allow the honey to dissolve and disperse more evenly in the mixture.
  2. Add the remaining ingredients and stir to combine everything well, then pour into your popsicle moulds.
  3. Place in the freezer to freeze until firm (approximately 4-5 hours minimum) and ENJOY!!
  4. If you’re feeling fancy or serving these to guests, finish them off with a small grate of lime zest or sprinkle of salt before serving.

Notes

Using regular coconut milk is key to keeping the mixture in suspension. The first batch I tried was with the light coconut milk and everything separated.

You can adjust the sweetness to taste by either leaving it out or adding more if needed. I’d love to hear what you guys go with!

In all of my testing, I had a close second and third choice one was replacing the soda and honey water for just coconut water and the other was a super simple version with just coconut water as the liquid which gave a nice refreshing option!

You can add sliced fruit or berries for a pop of color or different flavor.
