Enter my latest recipe: Peanut Butter & Greek Yogurt Cups with Magic Chocolate Shell. I’m a little late to the party, but this is my take on a viral recipe that was circulating awhile back. These delightful snacks, featuring the dynamic duo of Greek yogurt and peanut butter, are not only delicious but also packed with nourishing ingredients to satisfy both your taste buds and leave you feeling full and satisfied! What You Need For This Greek Yogurt Cup Snack
Greek Yogurt: Creamy and packed with protein, Greek yogurt forms the nutritious base of these cups. I like to use 2-5% milk fat as I find it less tangy, plus the added fat increases keeps you full and satisfied longer.
Peanut Butter: I used creamy peanut butter for this one but you can use whatever peanut butter you like. You can use crunchy, natural, Jiffy or another nut butter – whichever you choose just make sure it’s one that tastes good, feels good and is satisfying to YOU! Feel free to use other nut butters, like almond or cashew butter as an alternative, or a seed butter like sunflower or pumpkin seed to make it nut free!
Maple Syrup: Providing a natural sweetness, maple syrup complements the peanut butter and chocolate flavors while smoothing out all of the flavors.
Peanuts: Adding a crunch factor and satisfaction, peanuts add a nice texture and nutty flavor. This ingredient also gives it Peanut Buster Parfait vibes which I am definitely here for! You can also opt for other nuts such as cashews, crushed walnuts, or almonds for variety, but my preference is definitely peanuts for this one!
Dark Chocolate Chips: Adding richness and depth, dark chocolate chips provide a decadent layer of flavor and a touch of antioxidant goodness. If you’re not a fan of dark chocolate, feel free to use milk chocolate instead!
Coconut Oil: Coconut oil helps to thin out the chocolate, making it easier to pour and spread over the cups. It also helps with hardening the chocolate layer while leaving it soft enough to crack into!
How To Make Peanut Butter & Greek Yogurt Cups with Magic Chocolate Shell
In a medium bowl, combine yogurt, peanut butter, and maple syrup. Whisk until well combined, then gently fold in the peanuts.
Divide the yogurt mixture evenly between 4 ramekins or small containers.
In a microwave-safe bowl or glass measuring cup, heat the chocolate and coconut oil in 30-second increments until mostly melted, stirring between intervals (approximately 1 minute total). Some unmelted chocolate is okay, as residual heat will complete the melting process as you stir.
Pour the melted chocolate over the yogurt containers, ensuring even distribution. Sprinkle more peanuts on top if desired. Refrigerate for 30-60 minutes until set. Then, crack in and enjoy!

2 cups Greek yogurt ( I like 2-5%)

1/4 cup smooth peanut butter

1 tbsp maple syrup

1/2 cup salted toasted peanuts

1/4 cup dark or milk chocolate

2 tsp coconut oil
Instructions

In a medium bowl, combine yogurt, peanut butter and maple syrup. Whisk with a fork until well combined then fold in the peanuts

Divide the yogurt mixture between 4 ramekins or small containers

In a microwave safe bowl or glass measuring cup, heat the chocolate and coconut oil in 30 second increments until mostly melted, stirring in between (I did 1 minute total). It’s ok if there is still a bit of unmelted chocolate, the residual heat will finish melting it as you stir.

Divide the melted chocolate overtop of the 4 yogurt containers and top with more peanuts if desired.
