More Tacos! Cause why not?!
Today I’m sharing what has quickly become one of the most popular recipes from The 3-2-1 Method and sharing a special offer I have going on with you guys (skip to the bottom if you want to get your hands on this offer now)!
I know that the busyness of summer can sneak up on us and before we know it we’re in a flurry of activities, as we should be, enjoying the sunshine and longer days it brings. This year has been particularly busy in our household. The wedding countdown is on, less than 2 months away!! And we’ve decided to throw buying our first place on top of that, along with work being crazy busy this year! All amazing things, but it means I have to be extra organized to stay on top of things. But you know me, I LOVE food and I’m not willing to resort to flavorless blah at any expense!
This is why meal prep has become a crucial part of my weekly routine and I want to help you guys get on board, and get and stay on track no matter what your fun-filled summer throws your way!
I’m sharing this delicious Crunchy Roasted Cauliflower Chickpea Taco recipe to get you started! It is so quick to prepare, and as you know I aim for in my recipes, the rest is pretty hands off as you let the taco filling crisp up and roast away in the oven while you enjoy some time to unwind!
Tip: I find that having a few meal ideas on hand frees up time for more summer fun, so I’ve created a list of my well-balanced meal recipes for you here!
Cauliflower is on fire these days. You can make just about anything out of it! Cauliflower Pizza, cauliflower rice, you can probably even make ice cream out of cauliflower (don’t take my word for that…). It often gets a bad rep for it’s colorless hue but you’ll be happy to know it is in the cruciferous vegetable family, along with broccoli, cabbage and kale, and provides us with tons of anti-oxidant, anti-inflammatory, health protecting benefits. So go nuts with it!
This recipes is so satisfying and full of flavor, don’t be fooled by it’s meatless ingredient list, it is still packed with protein and fiber to keep you full and energized, without that heavy feeling that some tacos can give. Trust me- even your hubby will like this one! It has everything you need with the creamy avocado to top it off, and the lime crema… you’ll be drizzling that sh*#t on everything!

“This is the easiest plan I’ve ever done. I don’t know what my best case scenario was but this is even better. At no point have I felt like..ugh..I have to keep doing this? I’ve actually looked forward to the next meal every step of the way. 3 weeks in, I am now down 14 pounds and I’m sleeping better, my mood is better and I’m able to get back to activities I haven’t been able to do in years.” S.Sullivan
“I have been following the 3-2-1 Method for the past 5 weeks and cannot believe the results! I have not bought breakfast or lunch once since starting the program-which was a daily occurrence for me before. I did some simple math and have realized that this has saved me almost $300 in total! I also feel healthier than ever. The meals are filling and delicious, yet somehow I’ve lost 5lbs. I love the variety within the weeks and the fact that I have improved my cooking skills by making it a part of my daily routine. I am so grateful that Lindsay developed this program-it has truly been life changing for me!
